Cinnamon Apple Pound Cake
For the pound cake:
  • 1½ cup unsalted butter, softened
  • 8oz cream cheese, softened
  • 2½ cups granulated sugar
  • 6 eggs
  • 1 tsp vanilla extract
  • 1 tbsp ground cinnamon
  • ½ tsp nutmeg
  • 3½ cups all-purpose flour
  • 2 cup apples, peeled and diced
  • 2 tsp salt
For the glaze:
  • 2 cup powdered sugar
  • 1 tsp ground cinnamon
  • 4 Tbsp milk
  1. In a large mixing bowl, beat butter and cream cheese until smooth. Add sugar and continue to beat until fluffy. Add eggs one by one, beating until thoroughly consistent. Add vanilla. Slowly beat in flour and salt and fold in the apples.
  2. Pour batter into loaf pans that have been greased or lined with parchment paper. Bake at 350 degrees for about 75 minutes. Remove from oven and let cool for about 10 minutes. Turn loaves over on to a wire rack, right side up. Let cool completely before glazing.
  3. For the glaze, beat powdered sugar, cinnamon and milk until smooth. Drizzle over cooled pound cakes.
