Breakfast is the most important meal of the day, but since it falls during a time where I’m not at my best, I struggle with getting a meal on the table. I’m not a morning person. Pair that with the off-to-school shuffle and I’m toast. I’m always looking for ways to simply breakfast time and El Monterey came to the rescue. This was our very first time trying breakfast burritos of any kind. The El Monterey Meat Lovers variety were pretty tasty. I chose them since I love bacon and sausage. I just had to get over the scrambled eggs that I love… not so much. Since the scrambled eggs are wrapped up in a tortilla with meat and cheese, I am able to enjoy them. El Monterey’s breakfast burritos are perfect to grab on the go or to have alongside with some fruit and potatoes.
We have quite a few road trips planned this year and we seldom sit down and eat breakfast when we’re traveling. We are usually looking to grab something quick and carry on with our planned adventures. I can definitely see us bringing some of El Monterey’s breakfast burritos to keep in our room for a quick and easy breakfast. Best of all, they are individually wrapped for convenience.
For those times when we do want to sit down and have breakfast with little prep involved, we can pair them with fruit and potato hash. Potato hash is pretty simple to make and it reheats really well, making it a great accompaniment to El Monterey’s breakfast burritos. - 5 russet potatoes, cubed
- 1 small sized onion, roughly chopped
- ½ bell pepper, roughly chopped
- 2 cups smoked meat (bacon, ham or smoked sausage), cooked
- 1 tsp salt
- 1 tsp ground black pepper
- Brown smoked meat in a medium sized skillet over medium heat. Set aside, leaving most of the fat in the skillet.
- Add potatoes to the skillet and let them cook for about ten minutes, stirring and flipping occasionally.
- Add onion and pepper to the potatoes and continue cooking for another ten minutes. Letting them cook with a lid helps soften the potatoes.
- Stir smoked meat and seasonings in to the potato mixture and let cook for five additional minutes.
- Serve warm.

These look like a great breakfast item to have on hand for my weekends with my boy! I love the recipe for the potato hash as well. My husband would love that.

Yum! I need some of these in the freezer. Getting two kids ready for school with a newborn means that sometimes mamma isn't eating breakfast till she gets back home from school drop off. These would allow me to eat with the kids instead of 2 hours later.
