Lazy Peach Cobbler Made With Cake Mix

What do you do when you need to make a desert in the middle of moving and your power is suddenly shut off for four days? You crash with family and keep the recipe simple stupid. You use shortcuts like cake mix and the results are surprisingly delicioso. True story. We are without power until Monday since things got screwed up at power company… but we’ll manage.

Now, back to the delectable desert. It’s stone fruit season (fruit with pits) and Walmart’s set up their annual stone fruit showcase in the produce section. They challenged me to create a recipe with one of my favorite stone fruits and I chose peach cobbler. Because peach cobbler. Yes.

Being that I am away from my kitchen, I wanted to keep things simple which explains the introduction of cake mix. Yuuum! That and the cream cheese are the life of the party, because cream cheese makes everything better. The peaches and the cake mix make this desert sweet enough, so there’s really no need for extra sugar (so I omitted the 1/3 cup that was suggested in a few recipes that I compared). Let me know if you make this desert and if you decide to put a spin on it. The possibilities are endless!

Lazy Peach Cobbler Made With Cake Mix

Ingredients:
  • 1 box of yellow cake mix
  • ⅓ cup butter, softened
  • ¼ cup sugar
  • 2 large eggs
  • 4 fresh peaches, peeled and pitted
  • 8 ounces cream cheese
  • 1 teaspoon vanilla
  • 1 tablespoon cinnamon
Directions:
  1. In a large mixing bowl, combine cake mix, butter, and 1 egg. Mix ingredients to a crumbly consistency. Separate ½ cup of crumble for topping.
  2. Spray a 9x13 glass dish with cooking oil. Press remaining crumble into base of dish.
  3. Bake at 350 degrees for 10 minutes. As the crust bakes, slice peaches into 1 inch pieces.
  4. Beat cream cheese, sugar, 1 egg, and vanilla until creamy. Layer peaches on top of baked crust, then spread cream cheese mixture on top of the peaches. Top with reserved crumbs and bake for 30 minutes. Allow to cool for 30 additional minutes and serve with home churned vanilla ice cream.

How much sugar is in the cream cheese? It is in the recipe but not the ingredients.
