Patriotic Star Vanilla Cupcakes With Fruit

I swear the 4th has snuck up on us. Which also meant scrambling for ideas for this year’s special dessert. I wanted to bake some cupcakes and give them a patriotic twist without artificial coloring. I’m just on the fence about them and avoid them as much as possible. So I decided that strawberries and blueberries would give my star shaped cupcakes a patriotic splash of color.

Using my favorite recipe for vanilla cupcakes, I folded sliced strawberries and whole blueberries into the batter and topped them with a cream cheese icing and more strawberries and blueberries. I love how they turned out. So simple and delicious! The recipe is below. I recommend using Wilton’s Mini Star Pans or any star shaped cupcake pan :).

Serves: 18 cupcakes
Ingredients:
Cupcakes
  • 3 Cups All Purpose Flour
  • 3 Tsp Baking Powder
  • ½ Tsp Salt
  • 1½ Cup Unsalted Butter, softened
  • 1½ Cup Sugar
  • 4 Eggs
  • 1 Cup Milk
  • 2 Tsp Pure Vanilla Extract
  • 1 Cup Strawberries, sliced
  • ½ Cup Blueberries
Cream Cheese Icing
  • 8 oz Cream Cheese, softened
  • ½ Cup Butter, softened
  • 2 Cup Confectioner’s Sugar
  • 2 Tsp Pure Vanilla Extract
Fruit Topping
  • 90 Blueberries
  • 18 Strawberry slices, sliced or as is
  • (I didn't measure the fruit in a cup, oops)
Directions:
  1. Preheat oven to 350 degrees.
  2. Beat the milk, butter, and sugar on medium-high speed until light and fluffy.
  3. Slowly add in flour, baking powder, and salt.
  4. Add the eggs and vanilla and beat on low speed until combined. Scrape the side of the bowl with a spoon while mixing.
  5. Fold 1 cup strawberries and ½ cup blueberries into the batter.
  6. Grease and dust baking pan with flour (if using metal pans) and fill each vessel with batter.
  7. Bake each batch of cupcakes for about 15 minutes or until a tooth inserted into the cupcake comes out clean.
  8. Let cool for 10 minutes on baking rack and remove cupcakes from pan to prevent sticking (if using metal pans).
  9. Spread icing on top of each star cupcake. Place sliced strawberries in the center of the star cupcake. Top the points of the star cupcake with blueberries.

You've made me genuinely want to go bake some cupcakes! These look absolutely delicious, and I love some blueberries and strawberries. My favorites are blackberries, but too bad they don't fit the patriotic theme :)
