Quick & Flavorful Dinner: Sweet Potato Taco Bowls

If you asked me how many times I’ve cooked dinner over the summer, I wouldn’t even be able to tell you. Well, I should be able to seeing how infrequently I’ve cooked… like… a real meal. Okay, I know it had to have been at least seven. I blame the summer because who really feels like cooking in the heat? Add being massively pregnant to the mix and it’s sandwiches for all!

Now that baby Akilah is here and school is back in session, I’ve been trying to get back into the habit of cooking simple meals to avoid overspending on takeout and convenience foods. With the holidays on the horizon, I’m definitely looking to save my pennies. More importantly, I’ve been trying to seek meals that are healthier for my family.


I’ve been looking for ways to add more nutrient rich foods to our meals and sweet potatoes are always my go-to when I’m looking to kick up the vitamins. I was excited to find frozen sweet potato fries by Alexia Foods during a recent grocery run. Sweet potatoes in a form that kids would enjoy with little prep on my part? Hallelu! Since taco bowls were on the menu last week, I thought the Spicy Sweet Potato Fries with chipotle seasoning would be a great alternative to tortillas. The bowls were a hit and my picky eater, Jayden, couldn’t get enough of them! Here’s how we prepared our Sweet Potato Taco Bowls.

Sweet Potato Taco Bowls

  • 2lbs lean ground beef
  • 2 taco seasoning packets
  • 4 large tomatoes, diced
  • 1 large onion, diced
  • 1 bunch cilantro
  • 2 cups sliced black olives
  • 1 2lb. bag shredded cheddar cheese
  • 1 (8oz.) bag shredded lettuce
  • 2 (28oz.) bags of Alexia Seasoned Sweet Potato Fries, baked according to bag
Ground Beef
  1. In a large skillet or Dutch oven, cook ground beef until brown. Break it up into loose pieces with a wooden spoon as it cooks. Drain excess fat. Add taco seasoning and cook for 5 minutes, stirring to evenly distribute flavor.
Bowl Assembly
  1. Layer bowls starting with ground beef on the bottom, followed by sweet potato fries. Layer the additional veggies and cheese to your preference.
