Summer break is almost here and I am counting down the days until Jayden gets out of school. June the first is when lazy days begin, my friend. Okay, not really. Summer is when we actually start doing more; more of what we love without the restrictions of school days. Selfishly, I want to homeschool some day. Maybe by the time Akilah’s ready for school, we can entertain the idea. I’m still holding on to hope, but the Mr. continues to give me major side-eye.
With summer fast-approaching, fresh snacks are on my mind. Summer is a time when lots of our favorite produce is in season and with gardening, we do our best to eat more plants. With strawberries now in season, we’ve been gobbling them up lately. One of my favorite ways to eat strawberries is in salsa. I can eat salsa and chips all day, every day. I never gets old, neither does this Strawberry Kiwi Fruit Salsa that I jazzed up with Yoplait Original.
It starts with a pound of the prettiest, bright red strawberries, three cute little kiwi fruit and half of a red onion, diced with a bushel of cilantro on standby.
Out of left field comes a scoop of Strawberry Yoplait Original folded into the diced, fresh ingredients. The addition of yogurt turns this salsa into more of a treat for my tiny yogurt lovers and it also helps hold the salsa together a bit for scooping.
Next, comes the gorgeous cilantro, not just for visuals, but everything tastes better with cilantro. Am I right?
Because I am queen of different, I suggest serving with blue corn tortilla chips. Food Should Taste Good makes a delicious multigrain chip. When I sent the Mr. off to the store for ingredients, he called me asking if he could get yellow tortilla chips. No sir, yellow tortilla chips won’t pop on the plate like these beauties! That’s not what I said verbatim, but close. I can get a little passionate when it comes to my blog photo shoots.
- 1lb strawberries, diced
- 3 kiwi fruit, diced
- ½ red onion, diced
- ¼ cup fresh cilantro, chopped
- ¼ cup Strawberry Yoplait Original yogurt
- Dice strawberries, kiwi fruit, and red onion and place them in a mixing bowl.
- Gently, fold in yogurt and cilantro.
- Serve with your favorite tortilla chips.

I love salsas that include fruit in the recipe because they make the salsa taste more fresh and a little sweet as well. This one is perfect for movie nights or afternoon snacks! I really like the flavor combination.
